- 1 bunch parsley,chopped
- 1/2 cup mint leaves, chopped
- 2 Roma tomatoes, chopped
- 1/2 yellow onion, diced
- 1 cucumber, diced
- 1 can chickpeas, drained and rinsed
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chili flakes
- 1 cup couscous, cooked
- 2 tbsp olive oil
- 1/2 lemon, juiced
Cook the couscous according to package instructions.
Open the can of chickpeas. After draining and rinsing with water well in a colander, place chickpeas on a baking sheet and coat with smoked paprika and chili flakes. Roast on 350 degrees for 20 minutes.
Place chopped greens, tomatoes, onions, and cucumbers into a large salad bowl.
Add cooked couscous and roasted chickpeas.
Top salad with olive oil and lemon juice.
Stir well and enjoy!
